Knife Sharpening from Knife Makers
Professional sharpening for home cooks and chefs, with the knowledge and care of a knife maker. From everyday kitchen knives to specialist Japanese blades, we look at how each knife is made, its condition and how you use it to give it an edge that works for you.
Choose mobile sharpening at your home or business in London, or our UK-wide courier service.
Our Sharpening Process
A sharp edge is only part of what makes a knife cut well. The blade’s geometry, condition and intended use all matter.
We inspect each knife individually, using microscope inspection and BESS sharpness testing before and after sharpening to assess the edge and check the result.
Our process combines water-cooled sharpening, controlled angles and careful hand-finishing. Water cooling helps protect the steel’s heat treatment, while thorough deburring leaves a clean, refined edge.
We choose the sharpening angle and finish to suit the knife and its use. If you have a preferred angle or finish, let us know—we’re happy to discuss it.
